Dessert is the embodiment of this, but often only as an afterthought.
hédonisme. is a complete dessert experience I conceptualized, the first of its kind in Seattle, inspired by a culmination of my experiences in Michelin-starred kitchens and my mentors who have impacted me while I lived in Japan, Paris, and NYC during the last decade.
You’ll see that from the aesthetics to the flavour combinations—these are not your average desserts. I want to challenge the idea of desserts by bridging the gap between savoury and sweet, while sharing the stories behind my unconventional creations. My hope is for you to follow me on this journey while getting a glimpse of my perspective and palette as a pastry chef.
